My parents-in-law, Charles and Aleda, were here this weekend, which gave me a chance to try one of the new gluten-free baking books. Aleda’s been gluten-free for several years, and she doesn’t get to enjoy many baked goods. So we tried some sugar cookies from Babycakes Covers the Classics (gluten-free “covers” of classic  treats like donuts, s’mores, snickerdoodles). These used rice flour, arrowroot, and xanthan gum (I’ve always wanted to buy xanthan gum!), all of which were surprisingly easy to find at Whole Foods. The results? Pretty good, though not a dead ringer for the original.

And with a schmear of Nutella, they were way better than pretty good.
